You mean, smoking as an ADJECTIVE, not verb?

I think you mean “adjective” not “noun.”

I checked my dictionary which said a noun can be a “name of a class of people” I guess that makes her the queen of the “Smokin’ Hot Models” class of people.

I think you mean smoking as in literally and figuratively. By the way “Smokin’ Hot” are still adjectives meaning they describe the noun “Models”!
